Asparagus with Tarragon Vinaigrette


  • 1 lb asparagus
  • 2 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 1 tablespoon chopped fresh tarragon
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • Salt and pepper


  1. Preheat the oven to 400°F
  2. Trim the ends of the asparagus and arrange them on a baking sheet
  3. Drizzle the asparagus with olive oil and season with salt and pepper
  4. Roast in the oven for 10-12 minutes, or until the asparagus is tender and lightly browned
  5. While the asparagus is roasting, prepare the tarragon vinaigrette
  6. In a small bowl, whisk together the white wine vinegar, chopped fresh tarragon, Dijon mustard, minced garlic, salt, and pepper
  7. Drizzle the tarragon vinaigrette over the roasted asparagus
  8. Serve the asparagus with tarragon vinaigrette warm or at room temperature and enjoy!
