Summer savory beef stew

Your all time favorite comfort dish with your new favorite herb. What better way to highlight the flavour of summer savory than this hearty dish.

Ingredients:

  • 3 tablespoons vegetable oil
  • ¼ cup flour
  • 2 teaspoons salt
  • ¼ teaspoon pepper
  • 1 ½ pound boneless beef cut into cubes
  • 4 medium onions quartered
  • 4 cups beef stock
  • 6 small to medium potatoes quartered
  • 6 carrots cut into mini pieces
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 1 tablespoon dried summer savory

Instructions:

  1. Heat oil in dutch oven over high heat.
  2. Mix flour, salt, and pepper in a large bowl and add cubed beef.
  3. Toss to coat.
  4. Add beef and flour to pot and cook until browned, 10-12 minutes.
  5. Add onions and beef stock. Simmer on low heat until meat is tender.
  6. Add potatoes and carrots and continue to simmer until vegetables are fork-tender, 35-40 minutes.
  7. Mix cornstarch and water to form a slurry. Add to stew with summer savory and stir to combine.
  8. Bring to a boil and reduce until thickened.
  9. Serve hot.
