Lettuce Risotto

Ingredients:

  • 1 lettuce
  • 1 bunch of spring onions
  • 80 g butter
  • 225 g risotto rice
  • 50 g cheese
  • 1 L stock
  • 50ml dry white wine
  • Lemon zest
  • Salt
  • Pepper

Instructions:

  1. Boil the stock in a pan
  2. Melt the butter in another pan
  3. Chop the white part of the spring onions and cook in the melted butter gently
  4. Add the rice to the pan and stir
  5. Add white wine and simmer
  6. Add in a large amount of hot stock
  7. Put in chopped lettuce
  8. Stir until the rice is creamy
  9. Stir in lemon zest and cheese
  10. Season with salt and pepper
  11. Serve and enjoy
